Small tomatoes fresh from the garden.  Crisp bell peppers and chips.  Carrot chips!  They are a great compliment to any meal, right out of the bag or steamed for a few minutes.  You can find them in your produce section of your market.  The next time you are shopping for your veggies for the week, take your time to see what is new in your local grocery store or farmer's market.  Pre-cut jicama is a great time saver.  Snap peas, already washed and ready to go.  Add color and have fun while eating clean and healthy.

Railroad Museum to Debut Interactive & New  “A Shift in Power” STEM Learning Experience on June 26

California State Parks and the California State Railroad Museum are proud to debut an interactive and new STEM Learning Experience titled “A Shift in Power: Railroad History Meets Changing Technology” on Friday, June 26, 2015.  Funded by a National Science Foundation grant, the hands-on learning experience is part of a joint effort with five other history museums across the nation designed to introduce prototype STEM learning centers in historic settings.  STEM -- which stands for Science, Technology, Engineering and Math -- is an integrated learning system that utilizes play and other informal activities designed to encourage and stimulate problem-solving abilities.   Elements of the new learning experience at the Railroad Museum will include a toy train layout that is perpetually under construction, large format photographs, a flipbook showing examples of innovation in railroading, test benches with simple low voltage components for both alternating and direct

COCONUT CHIA PUDDING

Ingredients:
2 tablespoons chia seeds
½ cup coconut milk, unsweetened
1 tablespoon coconut flakes, unsweetened
1/8 cup cinnamon
½ teaspoon vanilla extract
1 teaspoon maple syrup

Stir together chia seeds, coconut milk, coconut flakes, cinnamon, vanilla extract and maple syrup.  Cover and set aside for at least 10 minutes.

Top with ¼ cup of berries (strawberries, blueberries, raspberries or any other) and 2 table spoons of sliced almonds.

Railroad Museum Celebrates “Diesels & Dads” On Father’s Day Weekend - June 20 & 21

California State Parks and the California State Railroad Museum are gearing up to celebrate “Diesels and Dads” on Father’s Day weekend – June 20 & 21, 2015 -- by operating two visually-exciting and gracefully-styled diesel locomotives as part of the popular weekend excursion train rides on the Sacramento Southern Railroad.  Departing hourly from 11 a.m. to 4 p.m., the brightly painted diesels -- Western Pacific No. 913 and Southern Pacific “Daylight” No. 6051 -- will pull the excursion trains both Saturday and Sunday on Father’s Day weekend.   The eye-catching and classic streamlined locomotives are representative of the so-called “First Generation” of diesel-electric locomotives which replaced steam engines all across America during the 1940s and 1950s.
